Rooibos is indigenous to South Africa and is naturally caffeine free. Harvested during the summer (Southern Hemisphere). After  being hand picked  the tea is then bruised and cut. At this stage, Rooibos is still green. The leaves turn red after fermentation. Fermentation is essential in order to enhance the flavor of the tea. Rooibos is fermented in mounds and then spread out to dry in the sunlight.
