Amaranth, Quinoa and Flax are often referred to as grains but they are not in the grass family and are best related to as special seed crops. They are extremely nutritious and are as beautiful as any ornamental you might choose for your garden. They provide carefree means for the home gardener to obtain abundant, highest quality protein and oil. Amaranth and quinoa have an amino acid balance close to ideal for human nutrition while flax seeds have a similar optimum fatty acid balance.
These three crops can be started early then transplanted if you are careful but are best direct sown in spring after the last frost. Once started, they can thrive with little water and they are not particular as to what type of soil they prefer. Best to thin them to a foot or more apart. You can expect to be harvesting their seeds by the end of summer.
Packets contain many hundred seeds.
