Collection: Squash Seeds (Cucurbita sp)
There's something very comforting and reassuring seeing harvested Winter Squash in the appropriate place in your house, and knowing they will help create delicious and nutritious meals through the winter.
There are two basic Squash varieties, both of which originally come from Mexico and Central America. Summer Squash is a high yielding, short-season crop that is used for stir-frying, sauteing and barbecuing while Winter Squash is a storage vegetable that is high in vitamin A, C and beta-carotene. Winter Squash is picked after the vine dies.
Squash is a warm weather crop and is usually started inside in pots around mid-May and transplanted out early in June. Seeds can also be direct sown in late May or early June. Squash take up a lot of space: final spacing should be 2 feet apart for Summer Squash and 4-5 feet apart for Winter Squash. Fertilize with lots of compost for large plants and fruits.
