One of the most prized edible weeds of Europe. Known in Spain as collejas: the people who harvest it there are called "Collejeros". Also called Sculpit and Maiden's Tears.
Starts in spring as a basal rosette of succulent blue/green leaves, then produces 2-3 foot shoots. The flowers are easy to identify with white petals on a bladder-like calyx.
Best to eat young in stir fries, soups or blanched quickly in boiling salted water. Tastes like green peas.
Prefers well-drained soil in full sun or part shade. Cool start in flats or direct sow.
