Brassica oleracea. An Italian heirloom of the Lacinato or "dinosaur" type family. Its rich, tender leaves are extra-dark green, noncurled but heavily savoyed and have a softer texture than curly green kales. Great for salad and braising, but perfect for seasoning & drying into chips. Heat and cold tolerant.
