Blooming Prairie Bean


I obtained this bush bean from my friend, Owen Bridge, of Annapolis Seeds and have only grown it for three years. It's quickly come to be one of my favourites because of its huge early production of beautiful pencil-thin, purple pods that stay as a great fresh bean for a long time. Their taste and texture is almost as good as Tanyas Pink Pod Bean. They are a great garden snack and a delicious cooked snap bean. The small round seeds mature in about 95 days and have a splotch of purple but are mostly creamy white. When dried and cooked, they are creamy in texture, similar to white navy beans. (Blooming Prairie is a city in Minnesota!)
