Florence Fennel (Foeniculum vulgare Azoricum)


Short lived perennial, often grown as an annual for its inflated leaf bases which form a bulb-like structure at the base of the plant. Has a delicious, sweet mild anise-like flavour, and refreshing crisp texture. Excellent sliced raw in green salads, sauteed, roasted or in casseroles. The seeds are used as a mouth freshener and appetite suppressant and also, along with the frilly leaves, can be used to season breads and cakes. In Italy known as "Finocchio".
